Pizza stone: All you need to know about pizza!

Pizza is your favorite food, but homemade pizza baked at home in a conventional oven tastes better than in a restaurant. Could you get a pizza pan? What pizza stone should you use?

Pizza stones are usually made from either fireclay or refractory ceramic cordierite. Both materials share the same properties: they can absorb moisture well and have high heat storage capacities. Fireclay is fireproof and can be used to build fireplaces or stoves. Cordierite is slightly more porous than fireclay, making it easier to clean. It also breaks slower. You can go right with either of these materials.

You can also choose from different thicknesses of stones, ranging between 1.5 cm and 5 cm. The basic idea is that the thicker stones can store more heat. The more heat it can hold, the better, as it transfers heat to the dough faster. Thicker stones take longer to heat up and are also heavier. 3 cm is a good compromise for heat retention and handling. Ordinary stones easily fit on a baking rack in a home oven. 30 x 40 cm. Place the pizza stone on the baking rack and place it in the oven. The pizza can be baked directly on the rock without baking paper.

How long should I wait to heat the pizza stone?

Depending on its thickness, you should heat the stone for 30 to 45 minutes. The stone will take longer to heat up the thicker it is. You can check the stone’s temperature with an infrared thermometer*. It should be at least 250 degrees.

How do I get the pizza on the pizza stone?

A pizza peel is recommended to get the pizza on the pizza stone. These are often sold with sets of pizza stones, which can be aluminum or wood. Either top the pizza on the peel first, then place it on the pan. Or you can put the pizza directly onto the pizza pan. Follow these steps to bake your pizza on the pizza stone.

  1. Before you place the dough on the pizza pan, flour it first. This will ensure that the dough doesn’t stick to the surface.
  2. To ensure the pizza slides smoothly on the pizza stone, shake the pizza peel gently in your hand. Add a little flour to the dough and shake it if it sticks. The dough should not stick to a pusher.
  3. Now, quickly shake the dough and place it on the stone.

How do I clean a pizza stone?

Some things like tomato sauce, cheese, and the dough will fall onto the pizza stone while baking. This can leave stains on the rock that is difficult to remove. However, it will not affect the quality of your pizza stone’s appearance. If there are any solid residues on the rock, you can clean it as follows:

  1. Don’t clean the pizza stone while it’s still hot or baking. Allow the pizza stone to cool before you wash it.
  2. Use a ceramic scraper* to remove any remaining residue after the stone has cooled.
  3. To remove any remaining residue, use a kitchen towel.

The stone can then be used again or stored away.

Do not use water or a damp cloth to clean your pizza stone. Water can penetrate the stone and cause cracks. In the worst case, the stone could even break.
