THAI TURKEY MEATLOAF

Meatloaf isn’t pretty. Let’s get it off the table. It’s just so ugly, in fact, that I could not stop laughing while taking these photos. All I could think of was those snarky postcards with pictures of molds for Jello and other disgusting foods in the 50s. But, you know what? After one bite, you will forget everything it is like. The smell alone is enough to make you reconsider. This bread is absurd (in the best way).

If you’re not a fan of breaded meats, I’ve found that this mix can make a delicious Thai turkey burger, too. To test the taste of the seasoning, I made one small portion in a pan, and it transformed into a mini turkey hamburger. Quite delicious. Place one of these on a Hawaiian roll, and you’re good to go. Also, you can make it as a meatball.

I topped my mouth-wateringly tasty (yet unattractive) meatloaf with an incredibly hot Sriracha glaze. If you’re not into spicy food, you could use a jar of sweet chili sauce (not as spicy as the name might suggest) or even a sweet and sour condiment. However, as you can imagine, I needed to try my Sriracha!

It’s quite a large loaf. It is easy to cut it in half in case you need to.

INGREDIENTS

LOAF

2 lbs of ground turkey ($5.36)

Four cloves of garlic ($0.32)

Three to four whole green onions ($0.38)

2 inches fresh ginger ($0.30)

3 Tbsp soy sauce ($0.18)

1 tsp toasted sesame oil ($0.19)

Two large eggs ($0.46)

1.5 cups cooked jasmine rice ($0.26)

GLAZE

1 Cup brown sugar ($0.12)

Two tablespoons of ketchup ($0.05)

2 Tbsp sriracha sauce ($0.17)

1 Tbsp rice vinegar ($0.04)

INSTRUCTIONS

Place the turkey’s carcass in the bowl of a large size. Cut the green onions into slices and chop the garlic. Add the garlic and onion to the bowl with the sesame oil and soy sauce. Peel the ginger and then grate right into your bowl with the fine cheese grater. Mix everything well.

Add egg and jasmine-cooked rice (white rice is fine in a pinch). Mix everything thoroughly. Cover a baking sheet with foil, then spray it with non-stick spray. Put the meat mixture on the baking sheet and then cut it into the shape of a loaf.

Preheat the oven to 350 degrees. Once the range is ready, place the loaf in the oven to wait for it to bake for 30 minutes. At the same time, the loaf bakes are prepared with a glaze made from Sriracha. In a small mixing bowl, mix the ingredients: brown sugar ket,  chupric,e vinegar, and Sriracha.

After it has baked for 30 minutes, take it from the oven. Pour half of the sriracha sauce over it. Bake for another 30 minutes. Pour the glaze on the top of the loaf and bake for an additional 15 minutes. A meat thermometer placed in the middle of the loaf should read 160°F.

Allow the loaf to sit for 10 minutes prior to cutting.
