Pizza Pot Pies
Preheat oven to 400degF. Combine the tomato sauce with the chicken, broccoli, and mozzarella in a large mixing bowl. Add salt and pepper. Mix well. Divide the mixture evenly among the ramekins. Use a paring blade to cut circles 1 inch larger than the ramekins. Place the rings over the ramekins filled with the filling and seal the edges by pressing down. Be sure to extend the dough beyond the edge of each ramekin. Sprinkle Parmesan on top of the dough and brush it with olive oil. Cut a small slit into the top of your pizza dough with a paring blade. Bake the pizza crust until it is golden brown, approximately 25 minutes. Remove the pizza from the oven and allow it to cool before serving. Servings: 6

Whole Wheat Autumn Apple Pizza
DIRECTIONS
Preheat oven to 375degF. Add 1/2T olive to a skillet on medium heat. Then add the onions and sprinkle with salt. Stir occasionally as you cook until the onions are soft, caramelized, and juicy. Add garlic in the last minute and cook for 60 seconds. Remove from heat and put aside. While onions are cooking, cut bacon. Cover with a second paper towel and place on a plate lined with paper towels. Microwave the pizza for 3-4 mins, or until all fat has been rendered. Set aside.
Roll the dough into a rustic circle or rectangle using your hands or a rolling pin. Sprinkle nutmeg and brush with the remaining olive oil. Slice the apples, but do not cut them earlier to avoid browning. Add about 1/4C of cheese on top. On top of the cheese, place a layer of apples. Add the onions and garlic. Finish with another layer of apple and bacon, then sprinkle the remaining cheese. If desired, add a few pieces of sage.
Bake for 25-30 mins, or until the cheese is golden brown.
